Vlaďka Gruntová nám přeposlala ještě jeden recept – návod na přípravu kvašené zeleniny. A taky povídání o ní… Kvašenou zeleninu používá a červenou řepu si už ke kvašení taky připravila – ale zatím ještě není hotová, na stůl přijde až příští týden.
Kvašením se prý mohou upravovat všechny druhy zeleniny nebo zeleninových směsí. Doporučuje se však míchat maximálně 5 druhů zeleniny, aby je tělo dokázalo zpracovat.
Kvašení je jednoduché a kvašená zelenina je dobrá a levná. Zároveň nám kombinace zeleniny a kvašení připraví pomocníka, který dokáže detoxikovat naše tělo. Dokáže pročistit hlavně naše játra – a ta máme v dnešní době znečištěná skoro všichni, i když nepijeme alkohol. (Prý játra poškozuje i zlost, vztek a nervozita! Tak pojďme hojit s láskou připravenou a s vlídností podanou kvašenou zeleninou.)
Postup je opravdu jednoduchý:
Zelenina se nastrouhá na struhadle nahrubo (mrkev, celer, ale i květák, zelí, cuketa, červená řepa) nebo se najemno pokrájí (cibule, paprika, rajčata). Na 1 kg zeleniny se přidají se 2 dkg soli a může podle chuti přidat i koření nebo různé bylinky (česnek, petrželová nať, bazalka, křen, do červené řepy třeba fenykl).
Vhodné je míchat šťavnatou zeleninu (např. červená řepa) s méně šťavnatými druhy (např. kapusta).
Směs se zamíchá a nechá 2 hodiny odstát. Pak se plní do zavařovacích sklenic a velmi těsně se napěchuje. (Nelze užívat sklenice
se šroubovacím uzávěrem. Ty totiž při kvašení nepovolí.) Na sklenice položíme víčka a upevníme je pomocí hlavice. Sklenice vyrovnáme na plech nebo tácek. Po zhruba dvou až třech dnech nastane bouřlivé kvašení a šťáva může vytékat mezi sklenicí a víčkem. Pak bude bude kvašení pomalu ustávat.
Po čtrnácti dnech je zelenina vhodná ke konzumaci. Můžete ji po otevření skladovat v ledničce libovolně dlouho – nekazí se.
