Letos v dubnu jsem poprvé ochutnala česnáček lékařský a hned jsem si ho zamilovala.
Česnáček lékařský (Alliaria petiolata) je tradiční léčivá bylinka, která roste téměř všude: ve světlých lesích, na mezích, kolem zahrad. Je vysoká zhruba 30 cm, má bílé květy a voní krásně po česneku. Používá se v lidovém léčitelství jako rostlina, která hojí a desinfikuje, údajně působí i proti rakovině. Čaj ze sušeného česnáčku se používá při zánětu močových cest a čerstvé listy pomáhají při hojení ran a mohou se také žvýkat při paradentóze nebo zánětech ústní dutiny. Protože má také hodně vitamínu C, tak se mladé lístky přidávají do salátů.
Osobně mi nejvíce chutná špenát z této rostliny. Je opravdu jemný. Jak jej připravit si můžete přečíst dole v komentáři.
Čím víc rostlina vyrůstá, tím lépe ji poznáme podle květů a vytvářejících se plodů – žel už nebude tak dobrá jako mladé rostlinky. Je proto užitečné najít si už teď, kde přesně roste a příští jaro jít „na jisto“.
Když česnáček začne žloutnout, nať se už k jídlu nehodí, ale dočetla jsem se, že se dají použít jeho semena jako koření nebo se z nich dá připravit domácí hořčice – to když se roztlučou a utřou s trochou kvalitního octa a soli. Těším se, jak si i tohle vyzkouším.
Recept na špenát z česnáčku: Omytou mladou nať nebo mladé listy vložíme do hluboké pánve na cibulku, kterou jsme lehce osmažili na troše oleje. Přidáme trošku vody, lehce podusíme, osolíme a rozmixujeme.
